- 5 mini cucumbers sliced into thin rounds
 - 2 tablespoons peanut butter
 - 1 tablespoon San-J No Soy Tamari
 - 1 tablespoon rice vinegar
 - 1 teaspoon toasted sesame oil
 - 1 teaspoon maple syrup
 - 1 small clove garlic minced
 - 1 tablespoon chili crisp
 - 1–2 tablespoons water to thin, if needed
 - Kosher or fine sea salt to taste
 - 2-3 green onions chopped
 - 1 tablespoon sesame seeds for garnish
 
Directions
- Chop cucumbers into thin rounds.
 - Mix peanut butter, tamari, rice vinegar, sesame oil, garlic, chili crisp, and some of the green onions. Mix until smooth, thinning with water of needed.
 - Toss cucumbers with the peanut sauce until coated, top with green onions and sesame seeds.
